We are road tripping tomorrow to pick up our daughter from Unversity. She lives a 5 hour drive from us, and has been self isolating in her apartment, but now is as good a time as any to pick her up as her lease is up. For the road trip we will be driving straight there and straight back – not stopping for snacks or lunch – so I need to pack some Vegan treats to feed her along the way.
These Peanut Butter Cookies are delicious. I used a modified version of my vegan cookie recipes that I used for the Vegan Cocoa, Shortbread and Butter Pecan cookies. The peanut butter flavour is dry and salty so I used just Granulated Sugar and more Vanilla – to “cut” the dry flavour, and I used more flour to form the dough. If you are out of baking powder and baking soda, you can experiment with going without – the cookies will just be a little flatter and less cakey!
Vegan Peanut Butter Cookie Ingredients:
1 Cup Granulated Sugar
1.5 Cups All Purpose Flour
1/2 Tsp Salt
1 Tsp Baking Powder
1Tsp Baking Soda
1/2 Cup Vegan Butter (I used Vegan Becel Margarine)
1 Cup Peanut Butter (I used non-name smooth)
1 Tbsp Vanilla
Additional Granulated Sugar for Rolling

Vegan Peanut Butter Cookie Recipe Preparation:
Pre-heat oven to 375 degrees F and line cookie sheet with parchment paper, or spray with non-stick spray.
Mix dry ingredients in mixing bowl. Soften margarine and mix with vanilla and peanut butter. Add to dry ingredients and blend. Depending on the peanut butter brand that you use, there may be more or less oil in the cookie dough. When the cookie dough is fully blended it should have a consistency which can easily be rolled into spoon sized balls. If the dough is too crumbly, add a little bit more melted margarine or peanut butter – until the consistency is just right. Form the dough into small balls, roll the balls in additional granulated sugar and flatten slightly on a prepared cookies sheet.

Cook in pre-heated 375 degree F oven until just browned. Let fully cool before removing from cookie sheet. These are heavenly! They should work for the road trip, but we’ll probably need to stop now for coffee, bathroom breaks and maybe we should get some exercise to burn off some of those Vegan Peanut Butter Cookie calories! Truly though, I really hope we don’t have to stop!

Thanks Angie – it was just a nice change from listening to the news all the time, the weather was nice and of course there was no traffic. The best part was listening to our daughter chat all the way home. The cookies were a success!

I love that you said the best part was listening to your daughter talk all the way home. My son can make a 3 minute story stretch out for an hour and I stop to think (sometimes while he’s still talking) that one day I’m going to miss this. One day day I’m going to wish for this back. It wouldn’t be that bad if he could find a topic other than Minecraft lol
