Cocoa Sugar Cookies

This is the third batch of cookies in my 12 Cookies of Christmas or 12 days of cookie series. I wanted something completely different from the shortbread, so today we are trying a leavened cookie with cocoa.

Sometimes you just want to make some cookies with the ingredients that you have on hand. Some butter, some sugar and some cocoa. Maybe a few more things. Cookies can’t just be all about the shortbread or the chocolate chips. You need some variety. So I decided to try a cocoa flavoured sugar cookie. I hope that you will like them. They are easy – leavened – your basic cookie. Just the thing when you want some comforting chocolate flavour but you just want some nice simple cookies.

Ingredients:

2 cups all purpose flour

1 cup butter

1.5 cups brown sugar

2 eggs

1 tsp vanilla

3/4 cup cocoa powder

1 tsp baking soda

1 tsp salt

1 flat bowl of granulated sugar for rolling – coating cookie dough

Cream softened butter with brown sugar

This is a classic leavened cookie. Cream softened butter and brown sugar with a beater until fluffy.

Add vanilla and eggs to brown sugar butter mixture. Gradually fold in dry ingredients and beat

Gradually stir in vanilla and eggs. Mix dry ingredients in a separate bowl. Gradually fold dry ingredients into mixture and beat.

Roll cookie dough into small balls – roll in granulated sugar

Take teaspoon sized scoops of mixed cookie dough – roll into balls – drop into granulated sugar – roll dough in sugar – place on parchment paper lined or greased cookie sheet and flatten dough into rounds. Sprinkle some more sugar over the tops of each cookie when on cookie sheet.

Flatten dough onto parchment lined or greased cookie sheet and sprinkle with more sugar

Bake in preheated 350 degree oven for 10 minutes. Let cookies cool and enjoy.

  5. Gradually fold dry ingredients into mixture and beat.
  6. Take teaspoon sized scoops of mixed cookie dough
  7. Roll into balls
  8. Drop into granulated sugar – roll dough in sugar
  9. Place on parchment paper lined or greased cookie sheet and flatten dough into rounds.
  10. Sprinkle some more sugar over the tops of each cookie when on cookie sheet.
  11. Bake in preheated 350 degree oven for 10 minutes.
  12. Let cookies cool and enjoy.
