This is my fourth post in my 12 Cookies of Christmas or 12 Days of Cookies series. I’m working through a selection of family and/or new original and/or tried and true cookie recipes. Along the way I am remembering some of my family’s traditions, trying out some new things, experimenting with baking and hoping to improve my overall cookie baking ability. Nothing says Christmas to me like cinnamon. These easy cookies are lovely crisp, buttery, sweet and very cinnamon flavoured. They provide some variety of flavour from the cocoa and shortbread flavoured cookies, but are still similar in preparation. I leave out the baking powder and/or baking soda in these cookies as I am not a fan of cake-like cookies.

The Best Cinnamon Cookie Ingredients:
1 cup salted butter softened
1 1/2 cup loosely packed brown sugar
1 large egg
1 tsp vanilla
1 tsp ground cinnamon
1 1/2 cups all purpose flour
cinnamon sugar in flat bowl for rolling** (directions at bottom)

The Best Cinnamon Cookies Method:
Cream together butter and brown sugar. Add egg and vanilla and beat. Stir in cinnamon. Add flour 1/2 cup at time, continue beating.
Place batter in refrigerator for one or two hours to allow batter to be workable.
Remove batter from refrigerator. With spoon or cookie scoop, take teaspoon size scoops of batter and roll into small balls.

Place cookie balls in cinnamon sugar and roll to coat.
On parchment lined or greased cookie sheet, flatten cookie balls and decorate by pressing with a fork (optional).

Bake cookies in preheated 350 degree farenheit oven for 10 minutes.

** Cinammon sugar can be purchased – but you can make your own. Combine 1/2 cup granulated sugar with 1 tablespoon ground cinnamon. Mix well!
